Yummy Corn Chowder

I posted on Twitter that I made a delicious corn chowder last night and received several requests for the recipe…your wish is my command.

3 oz. butter
1 large onion, finely chopped
1 clove garlic
2 tsp. cumin
4 cups vegetable stock
2 medium potatoes, peeled and chopped
8 oz. creamed corn
2 cups fresh corn kernels
1 cup grated Cheddar cheese
3 tbsp. heavy cream or silken tofu
2 tbsp. chopped fresh chives

Melt butter in large soup pot. Add onions and cook over medium-high heat until golden (approx. 5 minutes) Add garlic and cook 1 more minute. Add vegetable stock and cumin and bring to a boil. Add potatoes, reduce heat and simmer for 10 minutes. Add creamed corn and fresh corn; bring to a boil, then allow to simmer for 10 more minutes. Add cheese, salt and pepper to taste and cream or tofu (higher protein and less fat!). Serve sprinkled with fresh chives.
